2 cups blackberries
1 tbsp water
1/4 tsp ground nutmeg
1 tbsp cornstarch
2 eggs
1/2 cup sugar
2 tbsp butter, melted
vanilla ice cream or whipped cream, for topping
Preparation
Preheat the oven to 350°F. Butter an 8 x 8-in baking dish, or a 10-in pie pan. Rinse the blackberries in cold water, removing any impurities. Combine the blackberries and water in a saucepan, and cook gently over low heat about 6 minutes, until light purple and juicy.Remove 1/2 cup of the berry juice, and combine it with the nutmeg and cornstarch in another small saucepan. Cook over medium heat until thickened, about 5 minutes. Add the cooked berries and any remaining juice, and stir together.In a mixing bowl, beat the eggs, sugar, and butter together until blended. Add the bread crumbs and toss to moisten them.Pour the blackberry mixture into the prepared baking pan, and spoon the breadcrumb mixture over the top. Bake for 20 to 30 minutes, or until lightly browned on top.Serve warm, with whipped cream or ice cream.
